Makes 6-8 servings


Chopped Vegetables

  • 1 yellow onion
  • 3 cloves of garlic
  • 2 stalks of celery
  • ½ jalapeno
  • 1 green pepper

Canned Ingredients

  •  1 box of chicken broth (32 oz)
  • 2 cans of black beans rinsed and drained (15 oz)
  • 1 can of hominy rinsed and drained (15 oz)
  • 1 can fire roasted diced tomatoes (15 oz)
  • 1 can diced green chilies (4oz)
  • 1 ½ cups of corn
  • 1 cup of salsa


  • 2 ½ cups chopped cooked chicken (try rotisserie chicken)



  • sour cream
  • green onions
  • cilantro
  • tortilla strips

  1. To make your chicken tortilla soup you will want at least a 4qt pot to make sure you will have room for all your ingredients. Put the pan on the stove top over medium high heat. Drizzle in the 2 tbsp of oil in the bottom of the pan. Once your oil starts to warm you will want to add your raw chopped vegetables in first. This will give them a chance to soften and caramelize before you add you other ingredients and will start a nice base of flavor to your soup.
  2. Once your vegetables start to brown you can pour in your broth.
  3. Next stir in your spices and give them a few seconds to dissolve into the broth before adding your other ingredients.
  4. Pour in your canned ingredients and add your chicken. Do not forget to rinse and drain the beans and hominy but leave the juice from the tomatoes and chilies for added flavor.
  5. Let the soup come to a low boil and then reduce to a simmer for 10 to 15 minutes. Once your vegetables are looking nice and plump and your chicken shreds easily with a fork your soup is ready to serve.
  6. Pour the soup into bowls and if you like top with tortilla strips, sour cream, green onions, or cilantro. \
