We recently received a variety of spices and rubs from the Great American Spice Company. We were delighted with the fresh quality of the spices received. My husband is the grill master in our family, and the first grilling spice he put to the test was the Hogs Tale Rub. The spice was a blend of sweet and spicy but, don’t let the sweet fool you, the spice has a mild kick that really opens up the flavor of the pork.

This soft taco recipe is healthy, flavorful and delicious.

Hogs Tale Grilled Pork Fajita style Soft Tacos

Recipe from Tomatoes on the Vine

Makes 6

  • 1½ -2 pounds pork loin sliced into thin strips
  • Great American Spice Company- Hogs Tale Rub
  • 1 red bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 large Vidalia onions, quartered into eighths
  • 2 tablespoons olive oil
  • 6 warm flour tortillas

  • Monterey Jack, Colby Jack or Cheddar Cheese
  • Good quality store bought fresh salsa (we prefer Jack’s Special Salsa)
  • Chopped fresh cilantro
  • Sour cream

  1. Generously season pork loin strips with Hogs Tale Rub and let sit at room temperature for 1-hour. While the pork is marinating, slice the bell peppers and quarter the Vidalia onions. Place the peppers and the onions into a large bowl and toss with the olive oil until evenly coated.
  2. In a grill pan or basket, first place the pork loin and top with the pepper-onion mixture. Sprinkle a generous amount of Hogs Tale Rub.
  3. Heat grill to high and place the basket or grill pan to cook on direct heat for 12-15 minutes. Using tongs toss the mixture frequently until the vegetables are lightly roasted and the pork is no longer pink. Remove the grill basket or pan from the heat. Set aside.
  4. Place the flour tortillas directly on the grill grates for approximately 10-15 seconds on each side.
  5. To serve, place the pork, pepper and onion mixture, cheese, salsa, sour cream and cilantro into the warm tortilla and fold over.
