No Bake Vegan Pecan Pie

They say cliches are overused because they offer universal truths, but anyone who has tried their hand at Grandma’s pie recipe will acknowledge that whoever coined the phrase “easy as pie” obviously missed the boat.

Because baking a pie is FOR SURE not easy. Which is why anyone who believes that rules are meant to be broken considers Mrs. Smith and Sara Lee as the ace up the sleeve. Why reinvent the wheel?

I’ll tell you why. Because one look at the ingredient list and nutrition labels on the processed alternatives leaves a dry taste in your mouth and provides inspiration enough to go the extra mile. This pie is filled with protein, fiber, antioxidants, and omega-3s, yet free of processed sugar, cholesterol and unhealthy fats. And no need to mention it’s vegan and gluten free; what’s good for the goose is good for the gander.

So here’s the real story. This vegan pecan pie is fool-proof, so everything you learned in kindergarten will probably be enough to produce picture-perfect, award-winning results. No bake means no-worry! The biggest challenge will be in assembling the ingredients. But if you make a list, and check it twice, prep time is less than 15 minutes!

Pie Filling
  • 1/2 cup almonds
  • 1/2 cup pecans
  • 1 cup raisins
  • 1/3 cup medjool dates, pits removed
  • 1/3 cup organic brown rice syrup
  • 1/3 cup molasses
  • 2 tbsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp xantham gum
  • 1/3 cup water or unsweetened almond milk
  • 1/4 cup Enjoy Life vegan chocolate chips and/or pecans, optional garnish


Sprinkle a bit of the coconut into bottom of pie plate to prevent crust from sticking. Add the remaining crust ingredients to food processor and mix until blended. Press into pie plate using waxed paper (or wet your fingers) to prevent sticking.
Combine all pie filling ingredients in food processor and mix until creamy. Add water or unsweetened almond milk to reach desired consistency. Fill pie crust with pie filling. Garnish with pecans or chocolate chips, if desired. Enjoy!
