Gluten Free Vegan Pumpkin Pancakes

My sister-in-law gave these adorable boxes filled with gluten free vegan pumpkin pancake mix as gifts this year. We enjoyed making them on Christmas morning. They were delicious, nutritious, and consumable, making it a wonderful gift. Thanks, Aunt Cathy!
Ingredients:

 

Dry Ingredient Mix:
  • 2 c flour (a combo of gluten free baking four, oat flour, or almond flour- your choice)
  • 1 T baking powder
  • 1 t ground cinnamon
  • ¼ t ground ginger
  • ¼ t ground nutmeg
  • 2 T brown sugar
  • ½ t salt

Preparation:

 

Instructions for the pumpkin pancakes-
Add to the mix:
  • ½ c cooked pumpkin
  • 2 T oil
  • 1 ½ c soy, almond or rice milk
  • 1 egg/equivalent egg replacement
