Breakfast Microwave Sweet Potato Recipe

Looking for a healthy, quick breakfast solution? How about a breakfast that was all natural, filling and has different options for every day of the week? Sometimes the weekly oatmeal, fresh fruit, breakfast bar and fast food options need changed up, personally we’ve been watching our Gluten intake so again this is a perfect remedy and delicious way to start your day. All you need is a sweet potato, microwave and your choice of toppings.

We have noticed that the sweet potato is a totally healthy alternative, not to mention it’s been more filling than most other healthy breakfast options.






First, wash the potato in a sink, dry it off. Next, you will want to take a fork and puncture the potato all over, this will allow the potato to safely vent steam out of it and it will also allow the potato to cook more evenly throughout. Now, loosely wrap the potato with paper towels and place in the microwave for 5 minutes. Once it is done, you will want to flip the potato over and microwave for another 5 minutes. Carefully remove the potato from the microwave (it will be extremely HOT), slice it into halves and mash. After the potato is nice and mashed up, we like to add a little Vietnamese CinnamonPumpkin Pie SpiceApple Pie SpiceLaney Honey or any other option you can dream of. Depending upon which toppings you choose, your breakfast can be completely Gluten Free and Vegan friendly as well. Options, we are all about giving you options!
