Smothered Sweet Potato Skins

A delicious and healthy appetizer that features our tasty Garlic Chipotle & Savina rub.

Makes 4 potato skins

  • 2 medium sweet potatoes
  • 15 oz can black beans (rinsed)
  • 1 t. garlic chipotle & savina rub
  • 1 small can petite diced tomatoes (fire roasted is best)
  • dash of salt
  • Your choice of hummus
  • 2 T. fresh chopped cilantro


To prepare potatoes:

  1. Preheat oven to 400°
  2. Using a fork, poke a few holes in each potato
  3. Bake potatoes until tender (45 minutes to an hour)
  4. Cut each potato in half, and scoop out most of the inner flesh

Bean dip instructions:

  1. Combine beans, garlic chipotle & savina rub, diced tomatoes,  and salt in crockpot
  2. Simmer on low until the flavors have had a chance to combine

To finish:

  1. Spoon bean dip into hollow potato skins
  2. Top with hummus
  3. Garnish with fresh chopped cilantro
