Carrot Ginger soup is a hearty Fall recipe with warm spices, ginger, and a hint of maple syrup. Great for lunch, dinner, or even just a snack.

Makes 3-4 servings



  1. In a large pot over medium heat, saute onion, cinnamon, nutmeg and ginger in oil for 3 minutes.
  2. Add carrots, oats, orange juice, maple syrup and just enough vegetable broth to cover ingredients.
  3. Bring to a boil, reduce heat, cover and let simmer until carrots are soft (about 20 minutes).
  4. Turn off heat and puree with immersion blender.
  5. Garnish with parsley and serve.
