This recipe works great with any blend of vegetables, but we’re going to show how to use winter favorites like squash, red bell peppers, onions, and mushrooms.

Makes 4 servings

Ingredients:

Preparation:

  1. Preheat oven to 450°
  2. Spread vegetables evenly on a baking sheet and drizzle with olive oil. Toss by hand until vegetables are lightly coated.
  3. Bake for about 45 minutes.
  4. In a small saucepan, combine olive oil, cumin, coriander, ginger, red pepper, cinnamon, honey and thyme.
  5. Drizzle spice mixture over roasted vegetables and enjoy!
