This is a super easy and delicious shrimp recipe that features the unique flavor of saffron. Saffron is called “The Golden Spice”, because of the golden color it infuses into your food, as well as its rich heritage as an rare delicacy. Saffron is hand-plucked from threads of the Crocus flower, and it is extremely labor intensive to harvest. Thankfully, you only need a pinch or two to flavor your entire dish, so a little bit goes a long way!

Makes 20 shrimp

Ingredients:
  • 20 raw jumbo shrimp (thawed and drained if frozen)
  • 2 T. lemon juice
  • 2 cloves garlic (minced or pressed)
  • 2 tsp. dried oregano
  • 3 pinches saffron powder
  • 2 T. olive oil

Preparation:

  1. Prepare a vinaigrette by whisking together lemon juice, garlic, oregano, saffron, and olive oil.
  2. Pour vinaigrette over shrimp and marinate up to two hours.
  3. Skewer 4 or 5 shrimp on each stick and grill or bake at 425°, approximately two minutes per side or until the shrimp turns bright pink.
