Makes 4-6 servings

Ingredients:
  • 2 cups quinoa
  • 2 cups vegetable broth
  • 1/4 cup olive oil
  • 1 teaspoon white wine vinegar
  • 2 teaspoons curry powder
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1/2 cup grated carrot
  • 1/2 cup grated zucchini
  • 1/2 cup chopped parsley
  • 1/2 cup cranberries
  • 1/4 cup blanched sliced almonds
  • 3 scallions, chopped
  • 1/4 cup diced red onion

Preparation:

  1. Cook quinoa according to directions substituting vegetable broth for water.
  2. In a blender add olive oil, vinegar, curry, turmeric, cayenne, sea salt, and pepper.Pour this onto the cooked quinoa.
  3. Add grated vegetables, parsley, almonds, cranberries, scallions and red onions; mix well and taste for seasonings.
  4. Serve warm or at room temperature and enjoy.
