Creole Cauli-Rice

We all love rice, but the carbs don’t really love us back. This is a great recipe to trick yourself into thinking you’re eating rice, but it’s really cauliflower!

Ingredients:
  • 1 head cauliflower
  • 2 Tbs. olive oil
  • 1 c. red pepper, diced
  • 1 c. green pepper, diced
  • 1 c. white onion, diced
  • 1 bunch scallions, chopped
  • 4 cloves garlic
  • 1/2 tsp. thyme
  • 1 Tbs. Bayou Creole Seasoning
  • 2 c. vegetable stock

Preparation:

  1. Chop cauliflower into “cauli-rice” using a top blade food processor. You can also use a cheese grater for a similar result.
  2. Heat olive oil over medium heat, and add red & green pepper, onion, and scallions. Saute until soft
  3. Stir in garlic, thyme, and Bayou Creole Seasoning.
  4. Add cauli-rice and vegetable stock.
  5. Simmer for 30 minutes.
