Good For You Guacamole

Get ready for the big game with this delicious & healthy guacamole recipe!

Makes 2-3 cups

Ingredients:
  • 2 Limes
  • 1/4 c. red onion
  • 2 cloves fresh garlic
  • 1t – 1T Carl’s Hot Stuff Peppers
  • 1/2 c. cilantro
  • 3 small zucchini
  • 4 ripe avocados

Preparation:

  1. Combine lime juice, onion, garlic, hot pepper sauce, and cilantro
  2. Cut zucchini into large chunks, and puree in food processor
  3. Add zucchini to lime juice mixture
  4. Mash avocado in a separate bowl, then combine with lime mixture.
  5. Serve immediately, or refrigerate with avocado pit (to preserve freshness and color)
