Baked Potato Soup

I’m a huge fan of potato soup, over the course of my life I’ve probably tried over 100 different recipes of potato soup, but I’ve yet to try Baked Potato Soup.

Ingredients:
  • 4 large potatoes (baked, cooled, and cubed)
  • 2/3 c butter
  • 2/3 c flour
  • Salt and pepper to taste
  • 6 c milk
  • 8 oz sour cream
  • ¼ c thinly sliced green onions
  • 10 strips cooked and crumbled bacon
  • 1 c cheddar cheese
  • ½ tbsp parsley

Preparation:

In a large pot or saucepan melt butter.  Slowly stir in flour, salt and pepper until you have a smooth paste, gradually add milk.  Bring to a low boil and continually stir for 2 minutes.  Whisk in sour cream, and  add other ingredients while stirring.  Be sure to save some cheese, bacon and onions for garnish.
